I believe that one of the biggest misconception about healthy food is that you pretty much have to eat a salad or a grain of rice. Even though I LOVE salads, a hearty warm meal always makes me happy! Being healthy doesn’t mean being deprived. You are not on a diet, you are changing your life-style, right…? ;) I’m not a big red meat fan and I’m kind of new to the idea of Shepard’s pie. But I committed myself to try to cook at least one new meal a week to keep it interesting. Well, last week I decided to make Shepherd’s pie, but of course in my own little way.
Sweet Potato Chicken Shepherds pie
Mashed Sweet Potato’s topping
- 2-3 medium-sized sweet potatoes
- 2 cloves of garlic
- 2-3 tbsp reduced fat sour creme
- 2-3 tbsp chicken broth
- salt & pepper
- 1- 1/2 pound ground chicken (turkey or beef works too)
- 1 tsp olive oil
- 1 medium onion, diced
- 3-4 cloves garlic, minced
- 3-4 large mushrooms, diced
- 1 cup frozen mixed veggies
- 1 bell pepper, diced
- 2 tbsp whole wheat flour *
- 1 cup fat-free low sodium chicken broth*
- 2 tbsp tomato paste (low sodium)
- 1-2 tbsp Worcestershire sauce
- salt, pepper
- Fresh parsley for fresh topping
* For a gluten-free meal leave out flour and make sure broth is gluten-free.
Start with boiling the sweet potato and garlic cloves in salted water. Once cooked soft drain and mash them add sour creme a splash of chicken broth, salt pepper and garlic powder.
Now preheat the oven to 400 degrees.
In a large pan, add olive oil and add your all your vegetables except the frozen ones. When they are starting to be soft add your meat. Once cooked add your frozen veggies. After a couple of minutes, add the flour and mix it around well. Add broth, sauce, tomato paste, salt and pepper. (If you want to add some garlic powder too) Simmer on low for 8-10 minutes.
Add the meat mixture in an oven safe dish and cover with the sweet potatoes. I made “diamonds” on top with a butter knife to look pretty. Bake in the oven for 20-30 min or until the potatoes are turning golden brown. Take it out of the oven and let it sit for about 5 minutes before you grab your plate. Top with chopped parsley and enjoy!
So what are our thoughts about the meal? We ALL loved it and all 4 went back for a second plate. Being a guilt free meal, that was totally OK! My husband and daughters gave it two thumbs up! Sweet potatoes have amazing health benefits with a lot of vitamins, minerals and they are low in calories too. You could add other veggies like chopped up celery, kale or what ever else you have at home into the meat mixture too. This will be a monthly meal from now on in our home I’m sure of.
